10-minute vegetarian couscous recipe

Try making your own healthy Moroccan food with this delicious side dish!

Ingredients (serves 4 people)

  • 1 cup water
  • 1 cup couscous
  • 1/2 bunch radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup feta cheese, crumbled
  • Sea salt, to taste


  1. In a medium saucepan, bring water to a boil. Remove from heat, add couscous, stir, then cover and let cook for 5 minutes. Fluff couscous with a fork. Add radish, red onion, mint, salt, olive oil and balsamic vinegar, then toss to combine. Just before serving, fold in feta cheese.
