Beef Skewers

  • Beef ½ kg cut in (1 inch cubes, boneless)
  • Salt 1 tsp.
  • Chilli powder 1 tsp.
  • Turmeric ½ tsp.
  • Allspice ½ tsp.
  • Vinegar 1 tbsp.
  • Water 2 cups
  • Eggs 2 (beaten)
  • Bread crumbs as required
  • Onion 2 cut in (square cubes)
  • Tomato 2 (square cubes, seeds removed)
  • Bell peppers 2

Method

  • Boil beef with salt, chilli powder, turmeric, all spice, vinegar and 2 cups water till beef is tender. Remove it off the heat and cool.
  • Put beef on wooden skewers alternating with vegetables.
  • Dip skewers in beaten egg and roll in breadcrumbs. 
  • Fry until light golden.
  • Serve with your choice of sauce

Charcoal Chicken Kababs

  • Chicken ½ kg (boneless)
  • Lemon juice ¼ cup
  • Onion 1
  • Ginger 1 piece
  • Garlic 2 – 3 cloves
  • Turmeric ½ tsp.
  • Salt to taste
  • Black pepper powder ½ tsp.
  • Yogurt 125 gm. (thick)
  • Tomatoes 4
  • Charcoal as required
  • Oil as required

Method

  • Cut chicken into thin long strips
  • Mix lemon juice, onion, piece of ginger and garlic and blend into smooth paste. Set aside in a bowl
  • Add the chicken strips, turmeric, salt, black pepper and yogurt
  • Marinate the chicken for at least 30 minutes
  • Now thread one or two chicken strips in each skewer. Alter with a tomato cube
  • Get the charcoals burning
  • Cook over the charcoals until done
  • Serve with a tangy sauce

Social Meat Balls

Ingredients  

  • 2 kilos pound lean ground beef
  • 1 egg
  • 2 tablespoons water
  • 1/2 cup bread crumbs 
  • 3 tablespoons ground onion
  • 1 (8 ounce) can jellied cranberry sauce
  • 3/4 cup chili sauce
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons lemon juice

Directions

Preheat oven to 350 degrees F (175 degrees C). In a large bowl, mix together the ground beef, egg, water, breadcrumbs, and minced onion. Roll into small meatballs. Bake in preheated oven for 20 to 25 minutes, turning once. In a slow cooker or large pot over low heat, blend the cranberry sauce, chilli sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.
