Family-made Mini Cakes

Cook together as a family and enjoy these delicious chocolate mini cakes that are extremely easy to make.

These scrumptious little cakes are so easy to make – so grab your children to make this fun dessert that everyone will enjoy baking and eating.

Decorate them with mini meringues for a sophisticated touch.


(Serves 8 people)

1.       Cakes

500 ml (2 c) cake flour

80 ml (¹⁄3 c) cocoa powder

250 ml (1 c) ground almonds

10 ml (2 t) baking powder

375 ml (1½ c) brown sugar

200 g butter, melted

3 eggs 250 ml (1 c) butter

2.       Ganache

150 g dark chocolate

125 ml (½ c) creamer plain yogurt

3.       To Complete

24-30 mini meringues

Icing sugar (optional)


  1. Preheat the oven to 180 °C. Grease 8 ramekins and dust with flour. Line a baking sheet with parchment paper, grease and dust with flour.
  2. In a large mixing bowl beat together the ingredients until well blended. Pour the mixture into the ramekins and fill three-quarters of the way. Bake for 45 minutes or until a skewer inserted in the middle comes out clean. Turn out onto a wire rack to cool completely. Reduce the oven temperature to 100 °C.
  3. Melt the chocolate and stir in the yogurt. Cool until the mixture has a spreadable consistency.
  4. To complete, put the cakes on a serving platter and cover each with a ganache. Arrange the meringues on top and set aside until the ganache has set. Dust with icing sugar (if using).
