Spice Route: Aromatic coriander

Coriander adds a wonderful depth and warmth to any dish


Serves: 4 - 6
Preparation time: 15 minutes

Total time: 17 minutes


  • 5 ml ground coriander
  • 2 ml ground cumin
  • 1 ml ground cinnamon
  • 20 ml olive oil
  • 2 garlic cloves, finely chopped
  • 2 cans of chickpeas
  • Juice of 1 lemon
  • 125 ml tahini paste
  • Salt and pepper
  • 5 ml sugar
  1. Place the coriander, cumin and cinnamon into a small pan with the olive oil and garlic. Sauté for 2 minutes until aromatic. Set aside to cool.
  2. In a food processor, add the chickpeas, lemon juice, tahini and the sautéed spices. Blend together until smooth.
  3. Season with salt, pepper and sugar.


Did you know? Coriander seed comes from the coriander plant. The plant produces a white edible flower which, if left to seed, produces the fruit. This fruit is dried and either left whole or ground. It should be stored in an airtight container away from sunlight for optimal flavour. It adds a warm, aromatic flavour to foods.
