Spice Route: Clever with cloves

Cloves are one of the more distinct spices – added to food they create depth and aroma

Cloves (Syzygium aromaticum) are native to the Moluccas (Spice Islands) and can grow up to 20 m tall in moist, tropical areas with minimum temperatures never dipping below 8°C.

Did you know? Cloves are dried flower buds. Cloves are often used in treating toothache.

Meat marinade

Makes: 1 standard jar
Preparation time: 5 minutes

Meat marinade

  • 70 ml light soy sauce
  • 45 ml honey
  • 30 ml brown vinegar
  • 8 ml garlic powder
  • 5 ml ground cloves
  • 5 ml ground ginger
  • 3 ml cayenne pepper
  • 15 ml oil
  1. Mix the soy sauce, honey and vinegar together.
  2. Add the garlic powder, cloves, ginger and cayenne pepper.
  3. Mix in the oil well.
  4. Pour into a sterilised jar and store in the fridge. Use on beef, chicken or pork.
Tip Marinade in a jar is such a great gift idea. Tie a basting brush around the neck of the bottle for the perfect gift.
