Cardamom adds a distinctive warmth and aroma to the food with which it is cooked.

Cardamom is a perennial, which grows up to 4 m high. Although native to India, it grows anywhere in a tropical climate with high humidity.

Did you know?  Cardamom comes from the ginger family, which is native to India.
Cardamom chai tea
Serves: 6
Simmering time: 10 minutes
Steeping time: 5 minutesTotal time: 15 minutes

Ingredients
  • 6 cardamom pods
  • 15 ml fennel seed
  • 6 cloves
  • 1 cinnamon stick
  • 6 black peppercorns
  • 1 bay leaf
  • 100 ml loose black tea
  • 2 cups water
  • 7 cups milk
  • 90 ml brown sugar
  • 1 cup milk for foaming
  • Honey for drizzling
  1. Place the cardamom, fennel, cloves, cinnamon, peppercorns and bay leaf into a saucepan. Add the black tea. Pour 2 cups of water over this and bring it to simmering point. Allow the spices and tea to steep in the water for 5 minutes.
  2. Add the milk and sugar, bring back to simmering point. Allow it to simmer for another 5 minutes.
  3. Strain the spices from the tea and foam 1 cup of milk using a hand whisk. Share it out between the cups of tea and then drizzle with honey. Serve while still hot.
Note  Cardamom is best stored in its pod in a glass container placed in a dark environment.
