The paprika chili is a mildly spicy variety of Capsicum annuum. The spice paprika is derived from the finely ground fruit of this chili. Now cultivated almost all over the world, chilies originate from the Americas and were first used by the American Indians in cooking and for its medicinal and cosmetic properties.
Yoghurt and paprika marinade for lamb
Makes: about 500ml
Preparation time: 5 minutes
- 450 ml plain yoghurt
- 20 ml honey
- 15 ml lemon juice
- 15 ml lemon zest
- 1 clove garlic, crushed
- 15 ml paprika
- 5 ml chili flakes
- 5 ml mustard seeds
- In a bowl mix the plain yoghurt, honey, lemon juice and lemon zest together.
- Mix the garlic, paprika, chili flakes and mustard seeds together. Stir it through the yoghurt mixture.
- Rub this mixture onto a lamb roast and allow it to marinate overnight.
